Here's a recipe for delicate filet fish I discovered while overseas...fish applications include orange roughy, salmon filet, flounder, red snapper, etc...AND, it's heart healthy...
2 lbs of filet with skin on one side
2-3 oranges/grapefruit,lemons/limes
course ground black pepper
sea salt
teriyaki sauce
* Marinate filets in terriyaki sauce for atleast one hour
* slice your fave citrus fruit in equal thickness slices and line a large frying pan with the fruit, making a bed
* Place filets, skin side up, on bed of citrus fruit, and add several tsps of citrus juice to pan...at this time, sprinkle some sea salt and course ground pepper to fish to taste
* Turn stove on to high heat, and wait until you hear the sizzle of the juices, at which point you cover the pan tightly, and then turn heat down to medium for about 7-12 minutes, or until done to your taste
* Remove filets with citrus slices and place on a bed of your favorite rice
