Dustoff' Grilled Halibut

This is a family favorite...grilled marinated halibut, Asian fusion style...

* Six 1/2 lb halibut steaks
* small bunch of scallions
* 1 tbsp of chopped fresh ginger
* 2 tbsp of chopped coriander
* 1 cup Sake
* 2 tbsp of sesame oil
* 1/2 cup of fresh squeezed lemon/lime juice
* 2 tbsp of rind of lemon/lime
* 2 cloves of chopped garlic
* 1/2 cup of teriyaki sauce

Place all the spices/sauces/juices in a blender and puree.

Place steaks in a large glass dish and pour marinade over fish; marinate overnight (my preference), but 2-4 hours would be OK.

Place steaks over hot coals or high gas grill heat and cook 5 minutes each side.

Serve with your favorite side dishes.;)
 
Okay, you just got my mouth watering....too bad i do not have any halibutt....guess i will just have to use Dorado :D

Halibut Florentine

Place Halibut fillets or steaks in a glass dish for baking, (Not much bigger than the fish)

Cover the fish with thinly sliced sweet or yellow onions, slices don't need to overlap.

Spread sliced mushrooms over fish, amount to taste, I like a lot.

Cover this with sliced sharp cheddar.

Thaw one box frozen chopped spinach and squeeze the juice out.
Spread the spinach on top of the cheese.

Fill the dish to 3/4 the height of the cheese with milk, your choice.

Bake for 45min at 350

One of my faves, excellent with Striper too, (aka Morone saxatilis!)
