Is it OK to put my Triumph on the traditional type of bunks (2 x 8's mounted vertically) for a week or two without causing damage to the hull?

I wouldn't !!

You wouldn't jack your car up with the jack under the floorboards instead of the frame....... or walk thru your attic standing on the ceiling instead of the rafters........not even once. Just sayin.....

Thought of another one good one........"lift a baby without supporting it's head with your hand".......:o

On a more specific note......

You want to have the bunk configuration function in one or both of two ways.....
If on the flat areas of the hull bottom...they need to be wider to spread the load
or
If the bunks are vertical and narrow, they need to be positioned where they are supporting the hull where there is more structural rigidity. - ie: flat lapstrake runners, keel or chine areas

195cc on boat lift

Is it ok to temporarily store my boat on a conventional bunk setup, say for a week or two?
