This is a Cajun suace for putting on top of rice, It works with shrimp and fish or what ever you want to put in it alligator is real tasty this way too.
several large onions chopped up but not to small
two bell peppers chopped up
two stalks cellary
tthree large cans of whole tomatoes
tony chacherie's seasoning
old bay seasoning (my extra touch)
favorite hot suace
fish chunks
put a little oil in a big pot and make a light rue then cook the onions, bell peppers and cellary down until they are almost clear.
toss in the cans of whole tomatoes ( take them out of the cans, they chew easier)
I then add some old bay maybe about a table spoons worth just until you can taste it. then a little bit of tony's becarefull too much will make it salty
then a little hot sauce for some heat,slow cook for a hour or two then bring to high temp real quick throw in the fish and turn the heat back down serve on top of the rice......
